12 Days of Cookies "Pecan Sandies" Day 11

Ok.
I admit,
after making today's cookie I had to turn to Google to find out more about these light, flavorful concoctions!
Had never heard, nor obviously attempted, to bake a "sandie".
Yes, I have been living under a rock.
This delicious shortbread will definitely find its way back into my oven again. :)
 
 

Pecan Sandies

Ingredients
1 C butter
1/2 C powdered sugar
1/2 tsp vanilla
1/2 tsp almond extract
2 C All-Purpose flour
1/4 tsp salt
1 C pecans, crushed, chopped

Directions
Preheat oven to 325 degrees.

In a bowl, beat butter until creamy; then beat in sugar, vanilla and almond extracts until fluffy.  Mix in flour, salt and 1/2 C nuts until blended. 

With floured hands, form dough into 1" balls.  Roll balls in remaining nuts; place 1 1/2" apart on light greased baking sheets.  Flatten with fork tines dipped in flour to 1 1/2-2" across. 

Bake for 20-25 minutes or until lightly brown.

Yields appx. 2 1/2 dozen.

  1. Oh! Boy! Mark would love these. I wonder if I could put pecans in the saltless short bread I made the other day? Okay, last week - I feel off the cookie wagon days ago- they ate them faster then I could make 'em or photograph them. Those rotten kids. . . :( I'm making ricotta cheese cookies for the party. AND this time I'm getting my picture!

  2. Cleo, I can't believe you didn't know about Pecan Sandies! Ernie Keebler and his elven assistants have been baking these cookies, and their brother cookie, Just Sandies, in that old hollow tree for decades. My grandmother introduced me to pecan sandies when I was about 5-years-old, along with a glass of cold milk. I'd have eaten the entire bag right then and there if she hadn't stopped me! I still love'em. Today in WalMart, I stopped by their shelf and gazed longingly at a whole stack of them. Then took myself by the ear and led myself away from that section of the store. It's so sad, that after a 60-year friendship, I've had to swear off. At least until I hit my final target weight. I can't have them in the house, because I will find some rationale to convince me that "just one" is OK, and then "just one more . . . . I'm glad you love them, too! If I were there, I'd certainly have been forced to try your home-baked version.
